Ingredients:
- 1 cup rolled oats
- 1 cup oat flour
- 1 teaspoon baking powder
- 1/2 cup butter
- 1/4 cup brown sugar
- 2 Eggs
- 1/4 cup honey (you can adjust amount based on sweetness preference)
Choice of Additional Ingredients:
- Dried Cranberries (1/4 cup)
- Chopped Walnuts (1/4 cup)
- Assorted Nuts (almonds, Brazil nuts, etc.) Chopped (1/4 cup)
- Chocolate chips (1/4 cup)
- Cocoa powder (2 tablespoons)
- Chopped pistachios (1/4 cup)
Procedure:
In a large bowl, beat the butter and brown sugar until they begin to cream. Add the eggs and continue beating until you get a smooth and homogeneous mixture. Add the oat flour, regular flour and baking powder to the mixture. Mix well until you get a consistent dough. Add the ingredients you want to incorporate into the dough and knead gently until they are evenly distributed. Shape the dough into twelve small balls and place them in a bowl. Cover the bowl with plastic wrap and refrigerate the balls for 20 minutes to harden. Preheat a skillet over medium heat. Place the balls of dough in the preheated pan and compress them slightly to form flat cookies. Cover the pan and cook the cookies for 10 minutes. After that time, flip them over and continue cooking until golden brown on both sides. Remove the cookies from the pan and let them cool before enjoying.
