Ina Garten’s Genius Biscuit Trick from The Barefoot Contessa

Weekend breakfasts with the family are one of those precious times to make memories that will last forever, but if you hate the idea of having to get up early to cook for a group, you aren’t alone. If you love cooking and sleeping in, you need this super smart biscuit trick that Ina Garten recently shared.

The popular chef took to Food Network’s TikTok page to share this secret for making a batch of buttermilk cheddar biscuits, which she said she learned while running The Barefoot Contessa.

“I can make biscuits the night before and put them in the oven in the morning and they’re fantastic,” she said. That’s easy enough to do, but if you want them to turn out as good as Ina’s biscuits, she has a few more tips for you to follow.

“The key to making good biscuits is really cold ingredients,” she said. Your butter, eggs, cheese, and milk need to all come straight from the fridge because the hot oven hitting the cold dough will cause steam, and that steam helps your biscuits rise up light and flaky. Ina said some people even recommend freezing the flour so that it’s cold, too, but that’s one step she doesn’t do.

Once her dough is mixed, she rolls it out in a rectangular shape on the countertop, using lots of flour so that the dough doesn’t stick. The rectangle shape is intentional, and Ina explains why. Rather than using a biscuit cutter, she uses a large knife, which she also flours, to cut the biscuits into large squares.

“They came out really rough and very homemade-looking,” she says. This will save some time when cutting your biscuits, and it gives you bigger biscuits, too.

Once the biscuits are cut, Ina places them on a sheet pan and pops them in the fridge uncovered. The next morning she brushes them with an egg wash, sprinkles them with some shredded cheddar and bakes them. It’s really that simple to get a homemade breakfast ready the night before!

Ina shares the full recipe and instructions in the TikTok video, and she said it yields eight buttermilk cheddar biscuits. You can easily double or triple the recipe to feed more people, and this one is sure to be a crowd-pleaser!
