Katie Lee Biegel’s Chicken & Zucchini Meatballs & Orzo Salad: Warm or Cold

Looking for a delicious dinner that doubles as a nice lunch the next day? Katie Lee Biegel’s amazing chicken meatballs recipe does the trick. It is absolutely bursting with flavor and can be eaten warm or cold — whatever your schedule requires.

The Kitchen co-host shared a video of her recipe, which she calls “so so good,” on Instagram. “Chicken & Zucchini Meatballs with Orzo Salad 😋 Summer comfort food at its best!” she wrote. “Enjoy warm or cold out of the fridge. So so good!”

In the clip, she shares exactly how she made the light and fresh dinner. She starts with meatballs, which require grated zucchini, ground chicken, panko breadcrumbs, lemon zest, freshly grated pecorino Romano, and other ingredients. Combine everything in a bowl and roll into 2-inch meatballs. Bake until golden brown (and the chicken is fully cooked).

From there, assemble the orzo salad! You’ll start by boiling water and cooking boxed orzo according to the package instructions. Drain and arrange them on a baking sheet to cool. For the dressing, combine lemon zest, olive oil, and other ingredients, which you will combine then drizzle over the orzo. Other ingredients, like zucchini, dill, and feta, go on top, with the meatballs added last.

The whole thing can be presented in a huge serving bowl, which Biegel carries outside to dish out into individual bowls for an outdoor meal. It looks so yummy—and we love how it’s just as delicious if you eat it straight from the fridge!
